The best way to express your creativity in a kitchen is to prepare a complete salad lunch, I mean a whole meal on its own.
The aim is to mix the main ingredients necessary to remain healthy. Vegetables, leguminous plants, starches, proteins and grease. Even if you are vegetarian, vegan or something else you can prepare a balanced meal.
I used to eat mixed salad for lunch because it's easy to bring to work and doesn't need to be reheated. Anyway, it is simply delicious, fresh and enables to feel different tastes and textures.
This kind of salad offers many possibilities to mix ingredients. So, if one is unavailable, you can easily use another instead.
Ingredients
tomatoes
« fusilli »pasta
avocado
salad
carrots
ham and radish
Cook the pasta then cool it.
Clean the vegetables.
Grate the carrots, slice avocado, tomatoes and radish, cut the ham.
Add the salad leaves.
Then mix them all with the cold pasta.
Season with olive oil, vinegar, salt and pepper.
Add sunflower seeds, pumpkin seeds or flaxseed. Or the three !
A salad for lunch is definitely good advice for healthy eating. One of my favourites includes cold roasted sweet potato (lots of vitamins A and C), feta cheese and rocket salad. Delicious.
